Zuccotash Sweet Potato and Marshmallow Bake is a popular American vegetable accompaniment to hot cooked ham.
1 oz. plus
1 teaspoon butter
1| lb. sweet potatoes, baked
4 teaspoon salt
2 teaspoons clear honey juice of
2 eggs, well beaten
4 oz. marshmallows
Preheat the oven to moderate 350 F (Gas Mark 4, 180°C).
Using the teaspoon of butter, grease a large flameproof serving dish and set aside.
Place the sweet potatoes, salt, honey, the remaining butter, the orange juice and eggs in a large mixing bowl. Using a fork, blend the ingredients together until they form a smooth puree. Transfer the mixture to the serving dish. Place the dish in the oven and cook for 20 minutes.
Preheat the grill to moderate.
Remove the dish from the oven and arrange the marshmallows decorativcly over the surface of the mixture.
Place the dish under the grill and grill until the marshmallows are dark golden brown.
Remove the dish from under the heat and serve immediately.
