Zora’s Peach Dessert is marvellously easy to prepare and delicious to eat!
14 oz. canned peach halves, drained
1 tablespoon soft brown sugar
5 fl. oz. yogurt
1 tablespoon butter
4 tablespoons medium oatmeal
1 tablespoon clear honey
Put the peach halves into a medium-sized mixing bowl and, using a fork, mash them to a smooth puree. Beat in the brown sugar, then the yogurt, beating until the mixture is well blended. Place the bowl in the refrigerator to chill for 15 minutes.
Meanwhile, in a small saucepan, melt the butter over moderate heat. When the foam subsides, add the oatmeal and fry, stirring constantly, for 3 minutes or until it is lightly toasted. Stir in the honey and remove the pan from the heat. Set the mixture aside until the oatmeal has cooled.
Remove the bowl from die refrigerator and spoon the oatmeal mixture on top. Serve at once.
