Although extremely simple and quick to prepare, this sophisticated dessert tastes superb and is ideal to serve at the end of a summer dinner party.
2 tablespoons soft brown sugar
1 pint red wine
1-inch strip of lemon rind
1 tablespoon clear honey
12 firm fresh figs
Put all the ingredients, with the exception of the figs, in a large saucepan and place over moderate heat. Bring the liquid to the boil and reduce the heat to low. Add the figs and simmer the mixture for 10 minutes.
Remove the pan from the heat and carefully transfer the contents to a serving bowl. Allow the mixture to cool to room temperature and cither serve immediately or place in the refrigerator until required.
