These enormous sandwiches are both delicious and nourishing and are ideal to take on family outings – whether it’s to the zoo or the seaside! Eat them with potato crisps and plenty of cold lemonade or beer.
8 thin slices brown bread, buttered on one side 4 tablespoons peanut butter 4 thick slices mature Cheddar cheese 2 large tomatoes, very thinly sliced
1 teaspoon salt
2 teaspoon black pepper
4 thin slices white bread, buttered on both sides 4 lettuce leaves, washed and shaken dry
4 teaspoons mayonnaise
4 slices cooked chicken breast
1 tablespoon yeast extract
Lay 4 slices of the brown bread, buttered side up, on a flat surface. Spread them generously with the peanut butter. Place the cheese slices on top of the peanut butter and distribute the tomato slices evenly over the cheese. Sprinkle over half the salt and pepper, then carefully place the slices of white bread over the tomatoes.
Place a lettuce leaf over each piece of white bread and place a teaspoon of mayonnaise in the centre of each leaf.

Place a slice of chicken breast on each piece of lettuce and sprinkle over the remaining salt and pepper. Spread the yeast extract thinly over the remaining slices of brown bread and then press them firmly, yeast extract side down, on to the chicken.
Using a sharp knife, carefully cut each sandwich diagonally into 2 pieces. Secure the sandwiches with cocktail sticks and wrap them in greaseproof or waxed paper, or aluminium foil, to keep them fresh until they are required.
