This really different vegetable dish may be served as part of a vegetarian meal or as an accompaniment to roast meat or poultry.
1 oz. butter
1 small onion, finely chopped
1 lb. frozen peas
14 oz. canned artichoke hearts, drained and halved
8 oz. button mushrooms, wiped clean, stalks removed and discarded
1 teaspoon salt
2 teaspoon white pepper
½ teaspoon paprika
4 fl. oz. sour cream
In a large saucepan, melt the butter over moderate heat. When the foam subsides, add the onion and fry, stirring occasionally, for 5 to 7 minutes or until it is soft and translucent but not brown. Add the peas, artichoke hearts, mushrooms, salt, pepper and paprika. Reduce the heat to low and cook the mixture, stirring frequently, for 10 minutes.
Stir in the sour cream and cook for a further 3 minutes. Remove the pan from the heat.
Spoon the vegetables into a warmed serving dish and serve immediately.
