Zoe’s Delight is a fabulous and easy-to-make dessert which combines spicy apple puree, rum and rum-flavoured cream.
3 lb. cooking apples, peeled, cored, cooked and kept hot lg teaspoons ground cinnamon
3 tablespoons dark rum
1 tablespoon butter
10 fl. oz. double cream
1 tablespoon soft brown sugar
1 teaspoon cinnamon sugar
Beat the apples into a thick puree, then stir in half of the cinnamon, 2 tablespoons of the rum and the butter, stirring until the butter has dissolved. Spoon the puree into a large decorative serving bowl and place it in the refrigerator to chill for 30 minutes.
In a large mixing bowl, beat the cream with a wire whisk or rotary beater until it forms stiff peaks. With a metal spoon, fold in the remaining cinnamon, the remaining rum and the sugar and continue to beat until the mixture becomes very thick again.
When the apple puree is cold, remove the bowl from the refrigerator and, using a metal spoon, swirl the cream mixture into the puree, bringing the mixture up into decorative peaks.
Sprinkle over the cinnamon sugar and serve at once.
