This quick and easy dish really lives up to its name, as it takes very little time to prepare. Serve it as a refreshing first course for a summer dinner party or as a light lunchtime snack.
8 fl. oz. canned consomme
2 tablespoons dry sherry
½ teaspoon Tabasco sauce
4 teaspoons lemon juice
3 large avocados, halved and stoned
2 teaspoon cayenne pepper
In a medium-sized mixing bowl, beat the consomme, sherry, Tabasco sauce and half the lemon juice together. Place the mixture in the refrigerator to chill until it is set.
Brush the avocado halves with the remaining lemon juice.
Remove the consomme mixture from the refrigerator and break it up gently with a fork. Spoon the mixture into the avocado halves. Sprinkle over the cayenne, and chill in the refrigerator until they are required.
