This Zip-Zap Lunchtime Snack really can be prepared and cooked toithin thirty minutes. It is a delicate souffle-like combination of prawns or shrimps, eggs and cheese on hot buttered bread.
4 tablespoons mayonnaise
2 tablespoons single cream
2 teaspoons lemon juice
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 teaspoon paprika
8 oz. prawns or shrimps, shelled
2 large slices brown bread, buttered
6 oz. Emmenthal cheese, grated
4 egg whites, stiffly beaten
2 tomatoes, quartered
Preheat the oven to fairly hot 400 °F (Gas Mark 6, 200°C).
In a medium-sized mixing bowl, place the mayonnaise, cream, lemon juice, salt, pepper, paprika and 6 ounces of the prawns or shrimps. Using a wooden spoon, carefully mix the ingredients together and then spoon them on to the slices of bread.
In a small mixing bowl, carefully fold the cheese into the egg whites and spread it over the prawn or shrimp mixture.
Place the 2 slices of bread on a baking sheet and place the baking sheet in the oven. Cook for 15 to 20 minutes or until the egg white has set and is golden brown on top.
Remove the baking sheet from the oven and transfer each slice of bread to a warmed serving plate. Garnish with the remaining prawns or shrimps and the tomato quarters and serve immediately.
