Zest

Zest is the coloured exterior rind of citrus fruits, such as ORANGES, LEMONS, .

If a recipe requires the zest of a citrus fruit, carefully remove this outer skin with a very fine grater or, alternatively, rub a lump of sugar over the skin until it becomes saturated with the oils contained in the zest of the fruit and add that instead.

Another way to impart the zest of a fruit to a drink is to thinly pare off a piece of the rind and twist it over the drink to extract the fruit’s oil – this is often the finishing touch to a cocktail.
