Zara Ice-Cream Dessert

Zara Ice-Cream Dessert, a delicious dish of Yugoslavian origin, combines coffee ice-cream, Morello cherries and Maraschino liqueur.H pints Ice-Cream, coffee-flavoured 1 lb. frozen or canned Morello cherries, thawed or drained

1 tablespoon fresh orange juice

1 teaspoon finely grated orange rind

4 fl. oz. Maraschino liqueur

2 teaspoons cornflour , mixed to a paste with

1 tablespoon fresh orange juice

Spoon the ice-cream into individual serving dishes and place the dishes in the refrigerator while you make the sauce.

Put the cherries, orange juice, orange rind and Maraschino liqueur into a large saucepan and bring the liquid to the boil over moderately high heat. Reduce the heat to low and simmer the mixture for 3 minutes. Stir in the cornflour mixture and cook, stirring constantly, for 2 to 3 minutes or until the sauce is fairly thick and smooth.

Remove the pan from the heat. Remove the serving dishes from the refrigerator and spoon the cherries and sauce over the ice-cream. Serve at once.
