3 oz. butter
3 lb. onions, coarsely chopped U tablespoons flour
3 pints home-made veal stock
1 teaspoon salt }/ teaspoon black pepper
1 teaspoon sugar
3 bay leaves, finely crumbled
2 fl. oz. port
In a large saucepan, melt the butter over moderate heat. When the foam subsides, add the onions and fry, stirring occa- sionally, for
10 minutes or until’they are golden brown. Stir in the flour with a wooden spoon and cook for a further
5 minutes, stirring constantly, or until the flour is golden brown. Gradually add the veal stock, stirring constantly and being careful to avoid lumps. Season the mixture with the salt, pepper, sugar and bay leaves. Increase the heat to high and bring the soup to the boil. Reduce the heat to low, cover the pan and simmer the soup for
1 hour, stirring occasionally.
Remove the pan from the heat and stir in the port. Pour the soup into a large, warmed soup tureen or individual soup bowls and serve immediately.
