Yuletide Wessex Ham makes an ideal alternative to turkey for Christmas lunch. This delicious recipe combines honey, Morello cherries, wine and ham to make a succulent and spectacular dish. If Wessex ham is unavailable, Virginia or York ham may be substituted.
5 lb. Wessex ham, cooked
1 teaspoon grated nutmeg
4 tablespoons clear honey
1 lb. canned stoned
14 fl. oz. dry white wine
2 oz. soft brown sugar
Preheat the oven to moderate 350 F (Gas Mark 4, 180 C).
Using a sharp knife, score the surface of the ham in a diamond pattern. Rub the nutmeg into the ham. Transfer the ham to a large roasting tin and spoon over the honey. Add the cherries with the can juice and the wine. Place the tin in the centre of the oven and cook the ham for 30 minutes, basting every 10 minutes. Remove the ham from the oven. Sprinkle the brown sugar over the top. Return the ham to the oven and cook for a further
20 minutes or until the sugar has melted and the top of the ham is golden brown.
Remove the ham from the oven and, using two forks, transfer it to a heated serving dish. Using a slotted spoon, remove the cherries from the tin and arrange them around the ham. Pour the cooking juices into a warmed sauceboat and serve immediately, with the ham.
