Yuletide Spiced Brisket is an ideal stand-by to serve over the Christmas festivities. it takes
10 days to prepare, it can be started well in advance so giving you plenty of time to prepare and cook the traditional Christmas dinner. Once cooked it will keep for several days. Serve it thinly sliced with selection of pickles and baked potatoes.
3 oz. soft brown sugar
1×6 lb. silverside of beef
½ oz. saltpetre
4 oz. sea salt or rock salt
2 tablespoons black peppercorns
2 tablespoons juniper berries
1 tablespoon allspice berries
10 fl. oz. water
Using the palms of your hands, rub the brown sugar over the beef. Place the beef in a heavy earthenware pot, cover the pot with cheesecloth and set aside in a cool place for 2 days.
Using a pestle and mortar, crush the saltpetre, sea salt or rock salt, peppercorns, juniper berries and allspice berries.
Each day for a further 10 days, rub the sugared beef with the crushed salt and berry mixture.
After 10 days remove the beef from the pot and shake off any excess sugar and spices.
Preheat the oven to very cool 275 F (Gas Mark 1, 140°C).
Place the beef in a heavy casserole with the water. Cover the casserole with 3 layers of greaseproof or waxed paper and place the lid over the paper.
Place the casserole in the oven and cook the meat for 5 hours.
Remove the casserole from the oven and set aside for 2 hours.
Remove and discard the greaseproof or waxed paper. Pour off the fat and transfer the beef to a board. Wrap the beef in aluminium foil and place a plate with a heavy weight on the top.
Set aside for 24 hours before slicing thinly and serving.
