Yueng Chow Rice

A spicy and unusual way to serve beef, Yugoslavian Barbecued Beef will be a favourite vjitli all of the family.

2 fl. oz. vegetable oil

4 oz. cooked pork, diced

4 oz. cooked chicken, diced

4 oz. prawns or shrimps, peeled

6 oz. canned bean sprouts, drained

3 spring onions , trimmed and chopped

4 canned Chinese mushrooms, drained and sliced

1-inch piece fresh root ginger, peeled and finely chopped

2 fl. oz. soy sauce

4 oz. long-grain rice, cooked and kept hot

1 teaspoon white pepper

2 eggs, scrambled and kept hot

6 lettuce leaves, washed, shaken dry and shredded

In a large frying-pan, heat the oil over moderate heat. When the oil is hot, add the pork, chicken, prawns or shrimps, bean sprouts and spring onions . Fry, stirring constantly, for 2 minutes. Add the mushrooms, ginger, soy sauce, rice and pepper and stir with a wooden spoon until the ingredients are well mixed. Remove the pan from the heat and stir in the eggs and lettuce.

Spoon the rice mixture on to a warmed serving dish and serve at once.
