Yu Savoury Toast

Perfect for a light meal,Yu Savoury Toast is easy to make and delicious to eat. Serve zuith chilled lager.

8 oz. black pudding, skinned

1 medium-sized onion, thinly sliced

5 oz. medium oatmeal

2 fl. oz. brandy garlic clove, crushed

1 oz. butter

4 slices hot buttered toast

1 tablespoon finely chopped fresh parsley

A spicy and colourful Mexican dish, Yucatan Fish with Tomato Chilli Sauce is really delicious. Serve with a bottle of sturdy red wine.

Place the black pudding in a medium-sized mixing bowl and, using a fork, mash the black pudding into a thick paste. Add the onion, oatmeal, brandy and garlic. Using the fork, mix all the ingredients together.

In a medium-sized frying-pan, melt the butter over low heat. When the foam subsides, add the black pudding mixture to the pan and fry, stirring frequently, for 8 to 10 minutes or until the onion is golden brown. Remove the pan from the heat.

Place the toast slices on a warmed serving dish. Using a flat-bladcd knife, spread one-quarter of the black pudding mixture over each slice of toast. Sprinkle over the parsley and serve immediately.
