York Ham

York ham is the best known and most popular of English HAMS.

Today, the description York ham refers to pork that is cured to produce a mild, delicate flavour but is often used outside

Great Britain to describe all English hams. In the past, however, York ham was reputed to have gained its delicate flavour by being cured in the smoke of burning sawdust when the cathedral of York Minster was being built.
