York Castle Chocolate Tart is a luxurious dessert which is ideal for a special dinner party. Serve the tart with plenty of whipped cream.
1 teaspoon butter
2 egg whites
4 oz. ground almonds
1 oz. ground rice
4 oz. castor sugar
3 teaspoon almond essence
8 oz. dark cooking chocolate, melted
4 egg yolks
2 oz. icing sugar
2 fl. oz. whisky
2 fl. oz. double cream
Preheat the oven to warm 325°F (Gas Mark 3, 170°C).
Using the teaspoon of butter, grease an 8-inch flan tin. Set aside. Cut out 2×8-inch circles of rice paper. Place both the circles inside the flan tin. Set aside.
In a medium-sized mixing bowl, using a wire whisk or rotary beater, beat the egg whites until they form stiff peaks. Using a metal spoon, fold in the ground almonds, ground rice, sugar and almond essence and stir until the ingredients are thoroughly combined. Using a palate knife, spread the mixture over the sides and the bottom of the tin.
Place the tin in the oven and bake for 15 minutes.
Meanwhile, in a medium-sized mixing bowl, using a fork, beat the chocolate, egg yolks, icing sugar, whisky and cream until they are thoroughly combined.
Remove the tin from the oven. Pour the mixture into the flan case. Cover with aluminium foil. Return the tin to the oven and bake for a further 20 to minutes or until the filling has set.
Remove the tin from the oven and set aside to cool completely before serving.
