Yogurt and Banana Raita is an Indian salad which is chilled and then served as an accompaniment to curries.
1 pint yogurt
4 bananas, peeled and sliced
2 green chillis, very finely chopped
1 tablespoon lemon juice
1 teaspoon garam masala
½ teaspoon ground coriander o- teaspoon salt
2 teaspoons finely chopped fresh coriander leaves
In a medium-sized mixing bowl, beat the yogurt until it is smooth. Mix in the bananas, chillis, lemon juice, garam masala, coriander and salt. Cover the bowl with plastic wrap and place it in the refrigerator for 1 hour or until the salad is thoroughly chilled.
Remove the bowl from the refrigerator and remove and discard the plastic wrap. Sprinkle over the coriander leaves and serve immediately.
