Yam with Yogurt

This is a tasty vegetable dish to serve as part of an Indian meal or as an accompaniment to kebabs.

1 oz. butter

1 lb. yams, boiled, peeled and cubed

1 teaspoon turmeric

½ teaspoon cayenne pepper

1 teaspoon whole cumin

½ teaspoon salt

10 fl. oz. yogurt juice of

½ lemon

1 teaspoon sugar

2 green chillis, chopped

In a large saucepan, melt the butter over moderate heat. When the foam subsides, add the yam cubes and fry, turning frequently, for 3 minutes. Stir in the turmeric, cayenne, cumin and salt and fry for 2 minutes.

Stir in the yogurt, lemon juice, sugar and chillis. When the mixture is thorough-ly heated through, remove the pan from the heat.

Spoon the mixture into a warmed serving dish and serve immediately.
