Yahm Chompu (yahm tsh-awm-poo) is an exotic dish from Thailand consisting of tasty mixture of apple, pineapple, pork and prawns or shrimps. This salad makes interesting hors d’oeuvre for a special dinner party.
1 large, tart dessert apple, cored and diced
1 small pineapple, peeled, sliced, cored and diced
8 oz. lean cooked pork, diced
4 oz. prawns or shrimps, shelled
2 tablespoons chopped spring onions
1 cos lettuce, outer leaves removed, washed, shaken dry and shredded
6 tablespoons olive oil juice of
2 tablespoons soy sauce
1 tablespoon sugar
First, make the dressing. In a small mixing bowl, beat all the dressing ingredients with a fork until they are thoroughly blended. Set aside.
Place the apple, pineapple, pork, prawns or shrimps and spring onions in a large mixing bowl. Pour the dressing over the salad ingredients and carefully mix them together with a wooden spoon so that all the ingredients are coated with the dressing.
Arrange the shredded lettuce around the outer edges of a shallow dish and pile the salad mixture in the centre. Serve at once.
