Wyoming Viking Salad

In the pioneering days of the Old West the United States, great numbers of Scandinavians came and settled, bringing with them their customs, language and, most especially, their food. In time the Nezu World adapted these traditional recipes to what was available there – Wyoming Viking Salad is one such adaptation and an economical and delicious dish is the result.

Serve with rye bread or crispbread and lots of ice-cold lager.

1 lb. rollmops or pickled herrings, drained

1 green pepper, white pith removed, seeded and chopped

1 red pepper, white pith removed, seeded and chopped

2 oranges, peeled, white pith removed and segmented

1 large carrot, scraped and grated

1 small onion, finely chopped

4 gherkins, sliced

1 tablespoon finely chopped fresh parsley

2 teaspoon salt

1 teaspoon black pepper

4 fl. oz. French Dressing

Place all the ingredients in a medium-sized salad bowl. Using two large spoons, carefully toss the mixture so that all the ingredients are coated with the dressing. Place the bowl in the refrigerator for 30 minutes to chill before serving.
