Wye Cottage Cheese Salad

This is the perfect lunch or supper dish for weight-watchers! It’s so filling that all you’ll need as an accompaniment is some crispbread or Melba Toast.

2 lb. cottage cheese

10 oz. canned mandarin oranges, drained and with

2 fl. oz. of the can juice reserved

3 bananas, peeled and sliced

4 oz. small green seedless grapes

1 large peach, blanched, peeled, stoned and chopped

4 large lettuce leaves, washed and shaken dry

In a large mixing bowl, mix all the ingredients, except the lettuce leaves, together, stirring until they are well blended.

Arrange the lettuce leaves on the bottom of a large serving platter. Spoon the cottage cheese mixture over the lettuce, in a decorative ‘Y’ shape.

Serve at once.
