Wunderbar Macaroon Cream

This dessert is quick and easy to prepare and makes a perfect end to a dinner party. Any fruit, or mixture of fruits, may be substituted for the apricots.

8 oz. crushed Macaroons

4 fl. oz. double cream , whipped until thick but not stiff

1 teaspoon ground allspice

1 lb. canned apricots, drained and pureed

2 tablespoons brandy

2 oz. soft brown sugar

Preheat the grill to very hot.

In a medium-sized mixing bowl, com-bine the macaroons, cream, allspice, apricots and brandy. Spoon the mixture into a medium-sized flameproof dish and sprinkle over the sugar.

Place the dish under the grill and grill for 1 to 2 minutes or until the sugar has caramelized.

Remove the dish from the heat. Either serve the dessert immediately, or cool and then chill in the refrigerator until required.
