Wrangler’s Gammon Bake

Wrangler’s Gammon Bake makes a tasty and filling supper dish, which is extremely easy to prepare. Serve it with jacket potatoes and Cauliflower Cheese.

12 oz. lamb’s liver, cleaned and thinly sliced

4 medium-sized gammon steaks

6 fl. oz. red wine

1 tablespoon olive oil

2 garlic cloves, finely chopped

2 bay leaves

½ teaspoon salt

10 black peppercorns, crushed

2 teaspoon dried thyme

2 oz. mushrooms, wiped clean and sliced

1 tablespoon chopped fresh parsley

Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).

Place the liver and gammon steaks in a shallow ovenproof dish. Add the wine, olive oil, garlic, bay leaves, salt, pepper- corns, thyme and mushrooms. Cover the dish and place it in the oven. Cook for 45 minutes or until the gammon is very tender when pierced with the point of a sharp knife.

Remove the dish from the oven and remove and discard the bay leaves. Sprinkle over the parsley and serve at once, straight from the dish.
