Wow-Wow Relish is a hot, spicy relish which really adds lift to plain boiled meats, particularly beef. For a sharper relish, anchovy essence may be added to taste.
3 pickled walnuts, pounded to a paste
3 tablespoons finely chopped fresh parsley
1 oz. butter
1 tablespoon malt vinegar
1 tablespoon mushroom ketchup
1 tablespoon port
1 tablespoon prepared English mustard
In a small bowl, mix together the pounded walnuts and parsley. Set aside.
In a medium-sized saucepan, melt the butter over moderate heat. When the foam subsides, add the vinegar, mush-room ketchup, port and mustard, stirring with a wooden spoon to blend. Bring the mixture to the boil and cook until the mixture begins to thicken.
Add the walnut and parsley mixture to the pan and stir well to mix. Reduce the heat to low and simmer for 1 minute. Remove the pan from the heat, pour the sauce into a warmed sauceboat and serve at once.
