Wissant Pears with Ginger are quick to prepare and make an excellent fresh-tasting end to a meal.
4 pears, peeled, cored and thickly sliced juice of 1 lemon 2 oz. sugar 1-inch piece of fresh root ginger, peeled and thinly sliced 6 fl. oz. water
Place the pears in a serving dish and pour over half the lemon juice. Place the dish in the refrigerator while you make the syrup.
Put the sugar, ginger, the remaining lemon juice and the water into a small saucepan. Set the pan over low heat and cook the mixture, stirring constantly, until the sugar has dissolved. Increase the heat to moderate and boil the syrup for 2 minutes.
Remove the pan from the heat. Remove the dish from the refrigerator, pour the syrup over the pears and set aside to cool.
Place the dish in the refrigerator to chill for 1 hour or until ready to serve.
