An American adaptation of the famous Welsh Rarebit, Winnetka Rarebit may be served as a tasty lunch or supper snack.
1 tablespoon butter
8 oz. Cheddar cheese, grated
14 oz. canned condensed tomato soup
1 tablespoon Worcestershire sauce
½ teaspoon prepared mustard
½ teaspoon dried basil
4 slices hot buttered toast
In a medium-sized saucepan, melt the butter over moderate heat. When the foam subsides, add the cheese and cook, stirring constantly, until it has melted. Pour in the soup, Worcestershire sauce, mustard and basil and stir until the ingredients are thoroughly combined. Place the toast slices on individual serving plates: Pour the mixture on to the toast and serve at once.
