Wine Salad Dressing

A light dressing for green, raw mushroom or grated carrot salads, this Wine Salad Dressing enhances the fresh vegetable flavour. This salad dressing keeps well for

3 to

4 weeks stored in a screw-top bottle in the refrigerator. Shake the bottle before use. Use enough dressing to coat the salad ingredients thoroughly.

10 fl. oz. olive oil

3 fl. oz. dry white wine

2 tablespoons prepared French mustard

2 tablespoons soft brown sugar

½ teaspoon salt

½ teaspoon pepper

Pour the oil and wine into a medium-sized mixing bowl and add the mustard, sugar, salt and pepper.

Using a fork or a wire whisk, whisk all the ingredients until they combine into a smooth dressing and the sugar has dissolved.

Using a funnel, pour the dressing into a large bottle, screw on the top and store in the refrigerator until required.
