Wiltshire Ham with Broccoli is a quick to prepare and moderately inexpensive light supper dish.
8 large lettuce leaves, washed and shaken dry <S slices Wiltshire ham
8 oz. frozen broccoli, thawed and drained
1 o.Z. butter
1 tablespoon flour
½ teaspoon salt
½ teaspoon freshly ground black pepper
8 fl. oz. double cream
4 oz. Cheddar cheese, grated
1 tablespoon prepared mustard
½ teaspoon grated nutmeg
Preheat the oven to moderate 350 F (Gas Mark 4, 180 C).
Lay the lettuce leaves on a flat working surface and place one slice of ham on top of each lettuce leaf. Place 2 broccoli spears in the centre of each piece of ham. Roll up Swiss roll style and place the rolls in a shallow ovenproof dish.
In a medium-sized saucepan, melt the butter over moderate heat. Remove the pan from the heat and, using a wooden spoon, stir in the flour, salt and pepper to make a smooth paste. Gradually add the cream, stirring constantly and being careful to avoid lumps. Stir in the cheese and mustard. Return the pan to the heat and cook, stirring constantly, until the sauce has thickened and is smooth. Remove the pan from die heat.
Pour the sauce over the ingredients in the dish and place the dish in the centre of the oven. Bake for 25 to 30 minutes or until the top is golden brown. Remove the dish from the oven. Sprinkle with the nutmeg and serve immediately.
