A delicious and nutritious dish, Wiltshire Ham and Cheese Snack is easy to make.
2 oz. butter
2 tablespoons flour
2 teaspoon salt
½ teaspoon black pepper
4 fl. oz. milk
4 oz. button mushrooms, wiped clean and finely chopped
8 oz. frozen spinach, thawed
2 fl. oz. olive oil
6 slices Wiltshire ham
6 slices brown bread
6 fried eggs, kept hot
2 tablespoons grated Parmesan cheese
In a medium-sized saucepan, melt 1 ounce of the butter over moderate heat. Remove the pan from the heat and, using a wooden spoon, stir in the flour, salt and pepper to make a smooth paste. Gradually add the milk, stirring constantly and being careful to avoid lumps. Return the saucepan to the heat and cook, stirring constantly, for 3 to 5 minutes or until the sauce has thickened. Add the mushrooms and spinach and stir well to mix. Remove the saucepan from the heat and keep the sauce warm.
In a medium-sized frying-pan, melt the remaining butter with the oil over moderate heat. When the foam subsides, add the ham slices and fry for 2 to 3 minutes, turning occasionally, or until they are very lightly browned. Remove the ham from the pan and keep it hot.
Put the bread slices in the frying-pan and increase the heat to moderately high. Fry the bread for 2 to 3 minutes on each side or until it is golden and crisp.
Remove the frying-pan from the heat. Remove the fried bread from the pan.
Place the fried bread slices on individual serving dishes and spoon over the spinach mixture. Place a ham slice over each bread slice, top with the fried eggs and cheese. Serve immediately.
