Whitebait and Breadcrumb Fritters are a delicious way of preparing these tasty little fish. Served with a selection of salads, the fritters make an excellent light lunch or supper dish.
4 eggs
1 teaspoon salt
1 teaspoon white pepper
2 oz. fresh white breadcrumbs
8 oz. whitebait, rinsed and dried
2 oz. butter
12 parsley sprigs
1 lemon, thickly sliced
In a large mixing bowl, beat the eggs with a fork until they are well blended.
Add the salt, pepper and breadcrumbs and stir until the ingredients are thor-oughly mixed. Add the whitebait and stir until they are coated in the egg and breadcrumb mixture.
In a large frying-pan, melt the butter over moderate heat. When the foam sub-sides, drop tablespoons of the whitebait mixture into the pan and fry the fritters for 3 to 4 minutes on each side or until they are deep golden brown.
Using a slotted spoon, transfer the fritters to kitchen paper towels to drain. Keep them hot while you fry the remaining fritters in the same way.
Place the fritters on a warmed serving dish, garnish with the parsley and lemon slices and serve at once.
