The young or ‘fry’ of the HERRING or SPRAT, whitebait are tiny, silvery fishwhich are found in abundance, especially along the North Sea coasts.

Whitebait take their name from the fact that, until they became a delicacy, fishermen used to use them as bait. Nowadays, however, no one would waste these delicious little fish in that way!

Whitebait are eaten whole, and are most commonly served as a first course, either deep-fried or devilled. Allow 4 ounces of whitebait per person.
