White Peaches with Caramelized Sugar

White Peaches with Caramelized Sugar is a rich and sophisticated dessert which takes little time to prepare and tastes superb.

6 white peaches, blanched, peeled, halved and stoned

3 fl. oz. peach brandy

1 pint double cream , stiffly beaten

4 tablespoons soft brown sugar

Preheat the grill to high.

Place the halved peaches in a deep, flameproof serving dish, large enough to hold them in one layer. Sprinkle the brandy over the peaches and set aside for 10 minutes.

Using a flat-bladed knife, spread the cream over the peaches, making sure the surface is flat. Sprinkle the sugar over the cream.

Place the dish under the grill . Grill for 1 to 2 minutes or until the sugar has melted and formed a very dark brown crust.

Remove the dish from under the grill and serve immediately.
