Whipped Cheese Croutes

Cheese and cream, whipped, spread over Croutes and garnished with olives makes an ideal appetizer or could also be served as an hors d’oeuvre.

8 oz. cream cheese

4 tablespoons double cream

1 garlic clove, crushed

1 teaspoon paprika

1 small gherkin, very finely chopped

8 Croutes

8 stuffed olives, thinly sliced

In a medium-sized mixing bowl, cream the cheese and the double cream together with a wooden spoon. Stir in the garlic, paprika and gherkin. Spread the mixture evenly over the croutes and cut each croutc into 4 slices. Arrange the olive slices over the cheese mixture and place the slices on a serving plate. Serve immediately.
