West Country Junket

An extremely simple dessert to make, West Country Junket has a very light texture, and is delicately flavoured with cherry brandy. Rennet is available from most chemists or pharmacies. West Country

A delicate, sophisticated dessert, West Country Junket should be eaten the same day that it is made.

Junket should be eaten on the same day as it is made.

4 fl. oz. cherry brandy

16 fl. oz. milk

2 oz. castor sugar

2 tablespoon rennet

2 fl. oz. single cream

½ teaspoon grated nutmeg

Pour the cherry brandy into a large serving dish and set aside.

Pour the milk into a medium-sized saucepan and set the pan over low heat. Heat the milk for 2 minutes or until it is lukewarm. Remove the pan from the heat.

Add the sugar and stir for 2 to 3 min-utes or until the sugar has dissolved. Stir in the rennet. Pour the mixture into the serving dish. Pour over the cream and sprinkle over the nutmeg.

Set aside to cool at room temperature before serving.
