This delicious and easy-to-prepare dish is a German speciality. Wecksnappspiess (wayk-shnahp-spiss) makes an appetizing and filling supper dish served with spiced rice.

1 X 1 lb. slice of ham, cut into

1-inch squares

8 thin slices smoked ham, rolled

Swiss roll style

10 oz. veal kidney, cleaned, prepared and thickly sliced

4 tomatoes, thickly sliced

1 large onion, thickly sliced

4 tablespoons olive oil

2 teaspoon salt

2 teaspoon black pepper

6 tablespoons finely chopped fresh parsley

Preheat the grill to high.

Thread the ham, smoked ham, kidney, tomatoes and onion alternately on to 4 metal skewers.

Using a pastry brush, brush the meat and vegetables with the oil and season with the salt and pepper.

Line the grill rack with aluminium foil. Put the skewers on top and place the pan under the heat. Grill , turning occasionally, for 20 minutes or until the meat and vegetables are golden brown. Remove the pan from under the heat.

Place the chopped parsley on a large plate and roll each filled skewer in the parsley. Shake off any excess. Place the skewers on a warmed serving dish and serve at once. /
