This refreshing long summer drink is made with watermelon, orange juice and gin, and flavoured with mint. As a variation, add
2 fluid ounces of Liqueur de Cassis or orange-flavoured liqueur to the drink just before serving.
1 large watermelon, cut in half lengthways
10 fl. oz. dry gin juice of
3 mint leaves, bruised
4 strips orange rind, bruised
16 fl. oz. soda water, chilled
6 large ice-cubes
Using a sharp-edged metal tablespoon, scoop out and discard the watermelon seeds. Scoop out the flesh and place it in a large fine wire strainer held over a large mixing bowl. Using the back of a wooden spoon, rub the flesh through the strainer until only a dry pulp is left. Alternatively, blend the watermelon flesh in an electric blender. Discard the pulp in the strainer. Stir in the gin, orange juice, mint leaves and orange rind and chill the mixture in the refrigerator for 1 hour.
Remove the mixture from the refriger-ator and pour it into a tall glass jug. Stir in the soda water and ice cubes and serve immediately.
