Watercress, Fennel, Cucumber and Tomato Salad

Delicious Watercress, Fennel, Cucumber and Tomato Salad is a meal in itself – try it for lunch with lots of crusty bread.

1 bunch watercress, washed and shaken dry

I fennel, trimmed and sliced small cucumber, thinly sliced

4 tomatoes, quartered

6 anchovy fillets, halved

1 spring onion , trimmed and finely chopped

2 tablespoons chopped pimiento

3 fl. oz. French Dressing

In a large, deep serving platter or salad bowl, combine all the ingredients except the French dressing, tossing with two spoons until they are well mixed.

Pour the French dressing into the mix-ture and, using the spoons, gently toss until all the ingredients are well coated.

Serve at once.
