Watercress and Avocado Mayonnaise

A really refreshing and palate-tingling hors d’oeuvre, Watercress and Avocado Mayonnaise will set the tone at any dinner party.

4 small avocados

1 tablespoon lemon juice

4 tablespoons mayonnaise

4 tablespoons finely chopped fresh watercress

½ teaspoon dry mustard

½ teaspoon black pepper

4 lettuce leaves

1 bunch watercress, washed and shaken dry

4 lemon slices, twisted

Using a sharp knife, slice a small piece from the base of the avocados so that they stand upright. Cut off a 1-inch slice from the other end of the avocados and remove and discard the stones. Spoon a little of the lemon juice over the cut surfaces of the avocados. Peel the cut slices and place the flesh in a small mixing bowl. Add the mayonnaise, chopped watercress, mustard and pepper and mash with a fork until the ingredients are well mixed.

Spoon the mixture into the hollows in the avocados. Place a lettuce leaf on each of 4 individual serving dishes and place the avocados on the lettuce leaves. Garnish with the watercress and lemon twists and serve immediately.
