Volendam Canapes

Luxurious and easy-to-prepare cocktail snacks, Volendam Canapes may be served as appetizer before dinner.

24 CANAPES

6 large slices brown bread, crusts removed

4 oz. cream cheese

4 oz. smoked salmon, sliced and cut into

24 pieces

2 tablespoons lemon juice

1 small onion, sliced and pushed out into rings

2 oz. black caviar or lumpfish roe

6 parsley sprigs

1 lemon, cut into wedges

Place the bread slices on a wooden board.

Using a sharp knife, cut each slice into 4 diamond shapes. Discard the bread trimmings.

Spread each diamond shape with cream cheese. Cover each one with a piece of smoked salmon. Sprinkle a little of the lemon juice over the salmon and top with an onion ring. Place a little of the caviar or lumpfish roe in the centre of each onion ring.

Place the canapes on a decorative serving dish. Garnish with the parsley and lemon wedges and serve at once.
