An exciting first course, which is as hot and fiery as its name suggests, Volcanoes may be served with Melba Toast.
3 medium-sized avocados
Spicy Volcanoes are a delightful mix-ture of avocados and chillis, and they make an exotic first course.
1 tablespoon olive oil juice of lv lemons
2 teaspoon salt
1 teaspoon black pepper
1 small onion, finely chopped
2 garlic cloves, crushed
2 red chillis, finely chopped
3 tomatoes, blanched, peeled and chopped
1 tablespoon finely chopped fresh basil
2 teaspoon cayenne pepper
24 black olives
1 bunch watercress, washed and shaken dry
Using a sharp knife, cut the avocados in half. Using a teaspoon, scoop out the flesh and place it in a large mixing bowl.
Discard the stones and reserve the shells.
Add the oil, lemon juice, salt, pepper, onion, garlic, chillis, tomatoes and basil to the avocado flesh. Using a fork, mash all the ingredients together until the mixture is just combined.
Divide the mixture evenly among the shells, piling it up in the middle. Sprinkle over the cayenne. Place the shells in the refrigerator to chill for 15 minutes.
Remove the shells from the refrigerator and garnish them with the olives and watercress. Serve at once.
