Vitamins are organic substances found in food and are essential in maintaining a healthy body. Different vitamins are found in a variety of foods, for example vitamins A, D and E are in foods with a high proportion of fat, whilst vitamin C is contained in citrus fruits and green vegetables.

The vitamin B group contains a number of substances, the three most important ones are vitamin B1 (thiamine), vitamin B2 (riboflavinc) and nicotinic acid, or niacin, and these are contained in a wide variety of foods. Other substances in this group are folic acid, vitamin B12, pyridoxinc, pantothenic acid and biotin.

Some of the vitamins B and the vitamin C are water soluble which means that they are lost if food is overcooked in water and they also decrease when food has been stored for too long.
