Vin Chaud

Chaud (vahn sho) is a szoeet and aromatic combination of red wine, sherry, honey and spices, making it an ideal drink for a winter party or a convivial evening with friends.

1 dessert apple, baked for minutes

6 cloves

26 fl. oz. (1 bottle) red wine

2 fl. oz. sweet sherry

2 tablespoons clear honey

2 cinnamon sticks

2 teaspoon grated nutmeg

1 lemon, thinly sliced

Stud the baked apple with the cloves and set aside.

Pour the wine and sherry into a large saucepan and add the apple, honey, cinnamon sticks and nutmeg.

Place the pan over moderately high heat and bring the mixture to the boil, stirring occasionally to dissolve the honey.

Boil the mixture for 2 minutes and then reduce the heat to low and simmer for 10 minutes.

Remove the pan from the heat and discard the apple and cinnamon sticks. Pour the wine mixture into a large warmed jug or punch bowl and decorate with the lemon slices.

Serve at once.
