Vermouth Salad Dressing will really add zest to salads. It is particularly appropriate with a salad accompaniment to plain pork dishes or grilled fish.
8 fl. oz. olive oil
1 teaspoon salt
2- teaspoon black pepper
1 teaspoon finely chopped fresh tarragon
3 tablespoons dry vermouth
2 tablespoons lemon juice
In a small mixing bowl, beat the oil, salt, pepper and tarragon together with a fork. Gradually beat in the vermouth and lemon juice.
Store in a screwtop jar in the refrigerator until required. Shake the jar vigorously before using the dressing.
