A really unusual dessert, Verity Cream is easy to make and tastes delicious.
2 large avocados, peeled, stoned and mashed with a fork
4 tablespoons castor sugar juice of 1 lime or lemon 8 fl. oz. double cream , stiffly whipped
Using the back of a wooden spoon, rub the avocado flesh through a fine strainer held over a medium-sized mixing bowl until only a dry pulp remains. Discard the contents of the strainer. Stir in the sugar and lime or lemon juice.
Alternatively, blend the avocado flesh, sugar and lime or lemon juice in an electric blender until the mixture forms a puree. Transfer the puree to a medium-sized mixing bowl.
With a metal spoon, fold the cream into the avocado puree.
Transfer the avocado mixture to in-dividual serving dishes and chill in the refrigerator for 1 hour before serving.
