Vegetable Marrow Salad

A delightful vegetable and fruit salad in a tangy dressing, Vegetable Marrow Salad may be served as part of a cold buffet.

1 small vegetable marrow , steamed, peeled, diced and cooled

1 large orange, peeled, white pith

An unusual combination of fresh fruit and vegetables, Vegetable Marrow Salad makes a decorative addition to a buffet table. and pips removed, segmented and halved

4 02. French beans, cooked, cooled and halved

1 large carrot, scraped and diced

4 oz. button mushrooms, wiped clean and sliced 4 medium-sized tomatoes, thinly sliced

4 fl. oz. French Dressing

2 tablespoons finely chopped fresh mint

Place the diced marrow , orange, beans, carrot, mushrooms and tomatoes in a medium-sized salad bowl and set aside.

In a small mixing bowl, combine the French dressing and 1 tablespoon of the chopped mint. Pour the dressing over the salad and, using two large spoons, toss well.

Sprinkle over the remaining mint and serve the salad immediately.
