Fresh and natural, Uncooked Fruit Soup is as easy to make as its name suggests. Serve it as a first course or as a dessert.4 large fresh peaches, blanched, peeled, stoned and chopped
8 oz. Victoria plums, blanched, peeled, stoned and chopped
8 oz. cherries, blanched, peeled and stoned
1 large banana, peeled and mashed
4 tablespoons clear honey
1 pint milk juice of
1 lemon
5 fl. oz. single cream
Place the fruit and honey in the jar of an electric blender. Blend at high speed for 30 seconds or until the mixture forms a puree. Alternatively, place the fruit and honey in a large mortar and pound the mixture with a pestle until it forms a puree.
Transfer the fruit puree to a large soup tureen and pour in the milk. Using a wire whisk or rotary beater, beat the mixture until it is thoroughly combined. Stir in the lemon juice and cream.
Place the soup in the refrigerator to chill for 1 hour. Remove the soup from the refrigerator and serve at once.
