Tyrolienne, a la

A la Tyrolienne (ah lah tih-roh-lee-yen) is a classic French garnish for TOURNEDOS. It consists of fried onion rings and very finely chopped cooked tomatoes.

Sauce Tyrolicnne is served with fish, chicken, steaks or eggs and is made by combining BEARNAISE SAUCE, made with oil rather than butter, with tomato puree.
