A simple way of preparing turnips, Turnips Fried in Butter is an attractive dish to serve with lamb cutlets or grilled steaks. If you prefer, omit the parsley garnish and pour a herb sauce such as Ravigote or Parsley Sauce over the turnips before serving.
U oz. butter
1 lb. small turnips, peeled, sliced, boiled and drained V teaspoon salt
1 teaspoon black pepper
6 parsley sprigs
In a medium-sized frying-pan, melt the butter over moderate heat. When the foam subsides, add the turnips and sprinkle over the salt and pepper. Cook, stirring frequently, for 6 to 8 minutes or until the turnips are golden brown.
With a slotted spoon, transfer the turnips to a warmed serving dish and garnish with the parsley sprigs. Serve immediately.
