Turkey Meat Mould

An economical and tasty way to use up leftover turkey, Turkey Meat Mould may be accompanied by cold Bread Sauce to add to its flavour.


1 teaspoon butter

12 slices streaky bacon, rinds removed

8 oz. pork sausage meat

8 oz. cooked turkey, boned and finely chopped

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). With the teaspoon of butter, grease a 1-pound loaf tin.

Line the tin with the bacon. Spoon one-third of the sausage meat into the tin and smooth the surface with the back of the spoon. Cover with half of the turkey, and half of the salt, pepper and thyme. Continue making layers in this way, ending with a layer of sausage meat. Cover the tin with foil.

Place the tin in a baking tin and pour in enough hot water to come halfway up the sides of the tin. Place the baking tin in the oven and cook the mixture for 2 hours or until it has slightly shrunk away from the sides of the tin. Remove the baking tin from the oven and the loaf tin from the water.

Cut out an oblong of cardboard slightly smaller than the area of the tin. Place the cardboard on the tin and place a heavy weight on top. Chill the tin in the refrigerator for 8 hours or overnight. Remove the tin from the refrigerator. Remove and discard the weight, card-board and foil. Serve, cut into ½ inch slices.
